I have been doing a lot of research on the effects of chemicals and toxins in the body, due to many of my own and my family’s autoimmune issues. Its really hard to find quick, convenient healthy food anymore. At least things with ingredients you can pronounce! I am becoming more and more wary of using products or eating things that I have no idea what they are and what effect they have on my health. I almost want to grow my own food!! & Anyone that knows me knows I can’t keep a plant alive to save my life. So we would all starve or possibly live on the only plant I have successfully not killed.. aloe. Hahaha! Anyhow… I am a whiz at making up weird concoctions that are pretty tasty or at least my friends and family say so. I needed to find some quick grab & go food that was easy to make and tasted great. Voila… the clean ingredient protein bar! I am currently working on reducing inflammation in my own body and doing a very restricted “Paleo” eating program. It can be hard and pretty boring, so I have to learn to adapt. I just looked at some of the things I was allowed to have and made this recipe so it worked with my program. Feel free to add other things like nut butters/ dried fruit/ carob chips/ etc if you like. These are nutrient dense and have concentrated protein from grass-fed collagen as well as healthy fats from coconut butter. These are so good, they almost taste like dessert!
I truly believe that eating healthy does not need to taste terrible or mean eating out of a box or living on shakes. But in this busy rat race day in age, we all need to have convenience in our lives. This is just one little thing you could do that doesn’t take tons of steps or a lot of time to make it easy for you to do just that. I don’t believe in excuses, just make a choice and make it happen. INGREDIENTS
2 Tbsp Organic Coconut Oil
1 Cup Organic Coconut Butter
1 Bag Organic Shredded Dried Unsweetened Coconut
4-6 Scoops Collagen Protein Powder (also known as collagen hydrolysate)
1 Pinch of salt
1/2 tsp no alcohol vanilla extract
2 Tbsp Carob Powder ** (optional if you want a chocolate flavor)
*optional raw honey, stevia, or monk fruit sweetener to taste
