This past year I have been really focusing on my eating. So much so that I have lost about 55 lbs, and am finally on track to getting my weight under control once and for all. One of the things that I have noticed is that I need to eat very clean in order to feel well. There are so many things I seem to love that I cannot eat anymore. Whenever I do, I feel like total crap! How about you? Are there foods that you just love or think you are addicted to that make you feel crappy? Time to consider really limiting these foods or eliminating them altogether. Are you jumping on the gluten free band wagon? So many people are going gluten free these days, though my house is a split down the middle with my son and I gluten free and my husband and daughter gluten eaters. Several years ago my son and I discovered we have celiacs disease so even though we loved gluten, we just absolutely cannot eat it anymore. Because of this, we have had to change the way we eat a lot at our house and I just wanted to share with you some things that help me to eat clean most of the time. I cook a lot. I am not saying I spend a lot of time cooking though! People ask me how it is possible since I am a busy crazy woman lol! Here are some super easy things you can stock to make quick, clean healthy meals. I try to keep these things in the pantry all the time (& always check the labels for creepy ingredients and added gluten etc.. I try to always choose the least amount of ingredients also) organic chicken stock, salsa, brown rice pasta, organic spaghetti sauce, quinoa. I also do not buy any pre packed seasoning packets since they all seem to add crazy ingredients and gluten for some freaky reason. Flavor God makes some nice salt free non creepy dry seasonings also.
Here is my favorite go to recipe for a really quick dinner, if you like soup! We are soup people. Whenever the temperature drops below 76 here in Florida, it becomes soup making weather. Seriously though, its a great way to fill up and use up all the veggies in the fridge.
1 box organic chicken stock
1/2 onion chopped
1 whole bundle of chopped celery
1 carrot chopped
**bag of frozen riced cauliflower
1 jar of salsa
1 rotisserie chicken meat removed and chopped (no skin)
2 tbsp cold pressed olive oil
salt
pepper
salt free mrs dash (or other spice combo salt free)
Saute the onion, celery and carrots in the olive oil about 10 minutes. Add salsa, chicken broth and chicken & cauliflower (if desired) Simmer on med heat till combined and bubbly, then add the salt, pepper and seasonings to taste.
Super quick delish and healthy meal. This only takes about 15 min of total prep and another 15 min to make it. It doesn’t have to be fancy or take a long time to come up with clean recipes to go gluten free. I have so many recipes I could write an entire cookbook!
